Arugula Salad - Recipe
This side salad pairs with any meal and is prepared simply in minutes. The peppery flavor of the arugula is complimented by the brightness of Fedoras Meyer Lemon dressing.
Makes 1 Serving
Ingredients
- 1 cup fresh Arugula
- 10 to 12 fresh Blueberries (may substitute raspberries)
- 5 to 7 shaved Parmesan Reggiano flakes
- 1 to 2 tbsp. Fedoras Meyer Lemon dressing
Directions
- Rinse the arugula and pat dry (use a salad spinner if making multiple servings)
- Place the arugula on a small salad plate
- Add the blueberries
- Add the Parmesan Reggiano flakes. To create the flakes, shave the cheese with a peeler. The larger, more visible flakes provide a punch of flavor.
- Drizzle the Fedoras Meyer Lemon dressing on the salad
If making ahead on the same day, assemble the salad without the dressing and place in refrigerator to chill. When ready to serve, pull the salad out of the refrigerator and drizzle Fedoras Meyer Lemon.
